Cocktail of the week: Lavender Peach Bellini
With Mother’s Day just around the corner it’s time to plan something special! This delicious Lavender Peach Bellini recipe from Imogen Krupski (founder of Capital Cooking) is perfect for a quiet brunch.
2-3 ripe peaches, peeled, halved and stone removed
a dash of raspberry liqueur
750ml bottle of Champagne, Prosecco or sparkling wine, chilled
Fresh lavender sprigs
Blend the peaches in a blender until smooth.
Fill each of your chilled champagne glasses with 2 teaspoons of the peach puree. Add a dash of raspberry liqueur for extra colour and top with chilled sparkling wine.
Decorate each glass with a lavender sprig and serve straight away!
Use 1 parts puree to 4 parts sparkling wine. Good quality peach juice can be used as a substitute.
