Daniel Mertl named new head chef at Fleet Street’s Lutyens
Fleet Street restaurant Lutyens has announced the appointment of head chef Daniel Mertl, whose career to date has been an exceptional one, despite his relative youth.
Cutting his teeth at The Savoy and double Michelin-starred Le Gavroche, Mertl honed his skills at venues including Restaurant Gordon Ramsay, The Glasshouse, Chez Bruce and La Trompette – where he was part of the team which won, and retained, the restaurant’s first Michelin star.
With a consummate understanding of classic techniques and recipes, Mertl’s dedication to quality seasonal ingredients lends itself to Lutyens’ established style, while his progressive approach brings it into the modern day.
The evolution retains the elegance for which the restaurant is renowned, paired with sophistication and subtle global influences inspired by Mertl’s travels.
Sample dishes include home-smoked salmon with baby beets, crab apple and buckwheat potato pancakes; Lightly curried lentil parcels, tamarind, almonds and spiced yoghurt dressing; and a baked malt custard with honeycomb, pecan and chocolate chip parfait.
Alongside the A La Carte, Mertl has devised an accessible Business Lunch offering two courses for £24.50, while in the evening Lutyens’ City Suppers include three courses and a glass of champagne for £32.50 per person.
The balanced menu is complemented by one of the best wine lists in the City – as nominated by the AA guide – created by Master Sommelier Yves Desmaris. A varied offering, the wine list features bottles suited to an array of tastes and occasions, with Desmaris’ passion for small and artisan producers evident at all levels.
