With the return of Great British Bake Off next week (Tuesday 27th August), the nations’ interest in all things baking will once again be sparked – a leading UK supermarket even reported a 30% increase in demand for cake decorations during the last series of the show.

Warm Ginger Loaf Cake

Ingredients

175g unsalted butter
200g caster sugar
3 tablespoons Golden Syrup
250ml milk
250g plain flour
1 tbsp ground ginger
1tsp ground allspice
1 tsp bicarbonate of soda
Limoncello ice cream

Method

1. Grease and flour a 20x10cm loaf tin & preheat the oven to 180C / Gas Mark 4.

2. In a small saucepan, gently heat and stir the butter, sugar and golden syrup until fully combined.

3. Bring the mixture to the boil, then remove from heat and set aside.

4. Sieve the flour, bicarbonate of soda, ginger and allspice into a large bowl.

5. Stir in the liquid mixture until just combined together.

6. Pour mix into the prepared loaf tin.

7. Place in the oven and reduce temperature to 160C / Gas Mark 2.

8. Bake for an hour or until the top of the loaf springs back when lightly touched.

9. Serve warm with a generous scoop of Limoncello ice cream in front of Great British Bake Off.

Ultimate Brownie with Cold Brew Coffee Liqueur Ice Cream

Ingredients

125g salted butter
175g dark chocolate
40g cocoa powder
30g self-raising flour
175g caster sugar
2 large eggs
Pinch of salt
Cold brew coffee liqueur ice cream

Method

1. Preheat oven to 180C/ Gas Mark 4.

2. Line a baking tray with grease proof paper.

3. Slowly melt the butter and 125g of chocolate into a pan over a low heat. Set aside to cool.

4. In a bowl, mix the sugar, salt and eggs and combine with the chocolate mixture.

5. Sieve the flour and cocoa powder into the bowl and mix well.

6. Pour brownie mix into the baking tray and bake for 20 – 25 minutes, or until it’s set on top but squidgy in the centre.

7. Leave to cool and then cut into generous-sized squares.

8. Serve with a scoop of cold brew coffee liqueur ice cream and a dusting of cocoa powder and an episode of the Great British Bake Off.

Chocolate Chip Cookie Ice Cream Sandwich

Ingredients

320g plain flour
1 tsp baking soda
1 tsp salt
227g butter
128g caster sugar
64g light brown sugar
2 large eggs
2 tsp vanilla extract
Handful chocolate chips
Cherry brandy ice cream

Method

1. Preheat oven to 180C/ Gas Mark 4.

2. Line a baking tray with grease proof paper.

3. In a bowl, mix the flour, baking soda and salt.

4. In a separate bowl, cream together the butter and sugars then beat in the eggs and vanilla extract.

5. Gradually blend in the flour mixture and sprinkle the chocolate chips into the mixture, mixing until it becomes a dough.

6. Split the dough mixture in small balls and place on the tray, with space to allow the cookies to spread.

7. Cook for 12 – 14 minutes or until the cookies are light golden. Leave on a tray to cool.

8. Once the cookies are cool, spoon generous scoops of cherry brandy ice cream between two equal-sized cookies, pressing the cookies together to combine.

9. Place cookies in the freezer for an hour to allow to set, before serving.

10. Enjoy with a cup of tea and the new series of Great British Bake Off.
