Sample dishes include Charred cauliflower, smoked carrot + yeast caramel; BBQ cabbage, winter black truffle + curried black vinegar; and Winter pumpkin baked with natto, almond + buttermilk.

Kanja’s menu draws heavily on British-grown produce, sourced as locally as possible. Suppliers include a Japanese farmer in Lewes specializing in produce such as edamame beans that had previously only been available via import, and a forager from Kent, sourcing a wealth of obscure but incredible wild vegetation.

Similar care and attention has been spent on the drinks offering, with a selection of house-pressed juices, teas, infusions and ferments available to order individually or as pairings alongside the seven-course tasting menu. Sample drinks include Rosehip + omija; Purple corn cola; and Yuzu + Sorrel Kefir.

A carefully curated wine list puts a focus on small producers, with a special emphasis on Rieslings and Pinot Noirs, alongside a selection of sakes and a range of cocktails made with the kitchen’s signature collection of house-made tonics and tinctures.

The restaurant offers a full à la carte menu alongside a seven-course chef’s tasting menu priced at £69. A 3-course set lunch and pre-theatre menu is also available, priced at £33.
