Recipe of the week: Chocolate Madeleines

National Chocolate Week, officially launched in 2004, runs from October 14th–20th and is, as you might expect, a celebration of all things chocolate! So with this in mind we thought that our recipe of the week should cater for all those chocoholics out there.

Lila Sarhang Zadeh, owner of and head baker of independent bakery and patisserie Halva, shares this super tasty recipe for chocolate madeleines. Enjoy.

For 12 madeleines

Ingredients:
75g cooled down melted butter
100g all-purpose flour
25g cocoa powder
2 eggs
4 table spoons of milk
100g of caster sugar
6 dark chocolate squares
1/2 sachet of baking powder
pinch of salt

Method:
1.) Pre heat the oven to 170c.

2.) Pour the flour, cocoa and baking powder through a sieve into a bowl.

3.) In a mixer beat eggs and sugar, then add the milk and salt.

4.) While beating gently fold in the flour mixture.

5.) Finally fold in the melted butter and mix until fully incorporated.

6.) Grease and flour you madeleine moulds.

7.) Fill the madeleine holes to half level with madeleine batter.

8.) Add 1/2 chocolate button or square in the middle and cover the madeleine hole with batter.

9.) Bake in at 170c oven for 13 minutes.

Tips:
– Don’t overwork your batter.
– Stop mixing as soon as your butter is incorporated.
– Allow your melted butter to fully cool down before adding it to the madeleine batter.
