Restaurant Review: Imperial China, Hilton Mumbai International Airport, Mumbai in India

During my recent stay in the Hilton Mumbai International Airport, I was delighted to experience the Cantonese Culinary Route and explore the taste of China as Hilton Mumbai International Airport introduced a one of a kind cuisine originating from the Guangdong Province – Cantonese cuisine.

With the ‘Cantonese Culinary Route’ food festival, guests were taken on a gastronomic voyage to China. It was a delight to enjoy Modern day Cantonese cuisine which thrives on the right balance of flavours and delectable taste in a romantic ambience.

Chef Thomas Kai Lai curated authentic signature dishes like Chicken Terrain, Prawn XO, Lamb Chilli Spring Onion, Chicken Asparagus Soup and lots more. Classic Chinese lanterns and hanging swirls transformed the already beautiful restaurant into an oriental paradise.

Authentic signature dishes include Lamb Chilli Spring Onion

The award-winning, fine-dining restaurant ‘Imperial China’ is a symbol of culinary perfection. Chef Thomas Lai heads the culinary team of Imperial China as a Sous Chef. The affable chef brings over 31 years of experience in mastering Chinese and Pan-Asian food to his role at Hilton Mumbai International Airport.

In his diverse course of the culinary journey, he has worked with several stand-alone Chinese restaurants and establishments in India, such as – (Gurgaon) Kingdom of Dreams, (Mumbai) Rodas an Ecotel Hotel, Chopsticks, Journey’s End to name a few. He also carries international work exposure with his stint at (Saudi Arabia) Golden Palace restaurant and (Abu Dhabi) Nanking Chinese restaurant.

“The food at Imperial China has always been authentic Chinese & Pan-Asian and is a favourite with lovers of Asian cuisine. I am happy to continue the memorable dining experience that our guests enjoy and love at the restaurant. My cooking style is influenced by the knowledge passed down the generations in my Chinese family and from the masters of Chinese and Asian kitchen who have groomed me over the years.” said Chef Thomas.

Imperial China has a stylish and relaxed atmosphere

The Food & Beverage Manager of Hilton Mumbai International Airport – Brijesh Singh is excited with this new talent in the team and mentioned “Our guests deserve the best Chinese and pan-Asian food, that we are recognized, praised and awarded for. However, innovation is a part of the Hilton culture and we always promise to bring you new and exciting offerings. The intimate dining experience at Imperial China is about to usher in a new and fresh menu selection, which is inventive, yet traditional.”

With an exotic ambience, delicious food and efficient service, Imperial China is definitely worth several visits when in Mumbai!
