As the sky develops into a rich orange hue as the sun disappears from sight, we resume with local “sirvia” ceviche and gamba roja served with spiced coconut before moving onto a middle course of sautéed Mediterranean calamar, Char siu barbecue pork topped with Ibizan almonds.

Swapping between sea and land, this is followed by a fish course of octopus from the Japanese robata grill with panko and gochujang and a humbly sized main course of tender Wagyu striploin with black garlic and Chinese cabbage. As the stars reveal themselves above, dessert arrives – a matcha tea cremeux with granny smith apple and Thai basil. As creative as the crowd, the spiritual destination attracts itself, this five-course tasting menu is ideal for if you’re looking for a congregation of dishes that highlight flavours, textures and ingredients from across the wider à la carte menu and can be paired with its considerable wine collection.
