Clare Smyth and Dom Pérignon collaborate on ‘A Journey of Creation’ with an exclusive dining experience looking back to the past

For one night only, iconic Champagne brand Dom Pérignon and three Michelin-starred chef Clare Smyth celebrate the journey of creation and reinvention with an exclusive six-course dining experience paired with Dom Pérignon Vintages that looks back to the past.

On 14 November 2023 guests are invited to experience a series of CORE by Clare Smyth classics that have been perfected and revisited over the years, embodying the concept that creativity is an ongoing journey. Diners will enjoy the best of British produce that evokes emotions of nostalgia connected to Clare’s own journey and love of nature.

“I grew up on a farm and I had a deep understanding of what it took to produce food. It would have been in my late twenties that I started to understand what food meant to me personally, this was my part of my journey. We must be connected to our food. It must create an emotion, a memory, warmth, hospitality, generosity,” explains Clare.

Dom Pérignon’s creative legacy is the reinvention of its work with each vintage just as Clare reinvents her culinary creations as she gains maturity and knowledge through her career. Such culinary creations on the night will include Cornish turbot with crab, cucumber and Ras el hanout broth inspired by Dom Pérignon Plénitude 2 – the second life of Dom Pérignon as well as Sutton Hoo chicken inspired by Dom Pérignon Rosé 2008, a powerful and complex wine that creates great synergy between the cockles, clams, caviar and chicken.

“Nature is different every day in what it gives us. It’s about experiences, and experience in life, and working with produce that teaches us we cannot take these things as a given each time we taste them. In our memory we store flavours which is a gift we must tap into. When we taste at a vintage or an ingredient and then see the same thing come back in five or 10 years’ time, with life experience and knowledge, the older we get, the more we get to know something and understand it. The more I’ve understood and got to know Dom Perignon, the more I can also draw on those flavours in my memory to help me create,” added Clare.
