Love truffles? Well, there’s only once place to head and it’s Maison de la Truffe. And this emporium of all things truffle related, from delicious whole truffles to oils and salts.
It is also part of the Kaspia Group, which has Caviar Kaspia, the infamous restaurant in Paris – there’s a good chance you’ve spotted them on Instagram as their luxe jacket potatoes with a generous spoonful of yes, you’ve guessed it, caviar on top is oh-so-Instagrammable.
We catch up with Ramon MacCrohon, the CEO of the group to talk about all things truffles.
How did you start in the industry?
I started as marketing and comunications director of Caviar Kaspia in 2001. Caviar Kaspia and Maison de la Truffe are both part of the Kaspia Group. Today I am the CEO of the group.
Tell us about the group?
The Caviar Kaspia Group has a portfolio of Edible Luxury Brands such as Caviar Kaspia, Maison de la Truffe, Maison du Caviar, Crabe Royal, and Ecluse. It is a lifstyle group that creates experiences for its customers around specific luxury edible products.
What do you love most about your job?
The contact with the customers and seeing the satisfaction in their face when they experience one of our restaurants or products. Also the creative process around the creation of new concepts or the launch of new products or colaborations with fashion designers or artists.
How do you see the business growing?
Last year we openned two new concepts in colaboration with French designer Jacquemus, Citron and Oursin inside Galeries Lafayette Champs Elysee. In 2020, our growth will be focused internationally with opennings of Caviar Kaspia in London, Sao Paulo and Dubai. For Maison de la Truffe the growth will be on our wholesale division with a network of distributors around the world as well as the openning of restaurant/shops and ateliers in key cities.
What is it about truffle that you love?
I love the culture around truffles, the way they are found using highly trainned dogs, the fact that it is nature that decides where and when they grow and how many there will be. In Greek mythology they used to believe that every time a lightning thrown by the God Zeus struck the ground a truffle will grow.
White or black truffle and why?
That is a difficult one, they are different and I love them both.
Which are your favourite products, and how do you use them?
My favorite product is the truffle salt, that I use in eggs in the morning or the truffled olive oil that I use for cooking or for the salads.
